Vegan Truffle Mac N Cheese
( serves: 5-6 )
Prep Time: 15 Minutes
Cook Time: 20 Minutes


For Mac N Cheese:

- 3 tablespoons Earth Balance Butter (tub form not stick)

- 3 tablespoons truffle oil

- 3 tablespoons flour

- 3 cups unsweetened soy milk

- 1 ½ cups Daiya Cheddar Style Shreds

- 1 cup Daiya Mozzarella Style Shreds

- 1 slice Chao Creamy Original

- 1 slice Follow Your Heart American Style

- 1 lb pasta of your choice

For Bread Crumb Topping:

- 2 tablespoons Earth Balance Butter (tub form not stick)

- 1 tablespoon truffle oil

- ½ cup bread crumbs

- 1 teaspoon nutritional yeast


For Mac N Cheese:

- Cook pasta till al dente.

- Heat butter and truffle oil together until melted.

- Add flour and whisk.

- Add milk and whisk. Keep on medium heat until it starts to thicken.

- Add all cheeses and whisk until smooth.

- Add cooked/drained pasta and mix through. Add salt to taste.

- Pour into greased baking dish.

For Bread Crumb Topping:

- Melt butter and truffle oil on medium heat.

- Add nutritional yeast, and salt to taste.

- Turn off heat and stir in breadcrumbs.

- Place breadcrumb mixture on top of macaroni and cheese.

- Put under broiler until browned.
