Vegan Hearts of Palm “Lobster” Roll
( serves: 4-6 Rolls )
Prep Time: 10 Minutes
Cook Time: About 1 Minute Per Roll

Ingredients

- 1/2 cup red onion, chopped

- 1 cup celery, chopped

- 2 14 oz cans whole hearts of palm

- 3/4 cup Vegenaise

- Juice of half a lemon

- Salt and pepper to taste

- Earth Balance butter

- Vegan Hawaiian hot dog buns (we found vegan ones at Sprouts, if you can't find Hawaiian a regular hot dog bun will work)

Directions

- Whisk Vegenaise and lemon juice in a large bowl. Cut hearts of palm in 1/2" pieces.

- Add onion, celery, and hearts of palm pieces into the Vegenaise and lemon juice mixture. Salt and pepper to taste.

- Heat pan on high heat. Place a teaspoon of vegan butter per hot dog roll in pan. Let butter melt and open roll so you can lay it flat on the melted butter. Fry the roll in the butter till browned. Do not flip it, just the open side should be browned.

- Place a couple spoonfuls of the hearts of palm mixture in each bun.
