Vegan Bourbon Pumpkin Bread
( serves: 2 Loafs )

Cook Time: 65-70 Minutes

Ingredients

For Bread:

- 3 2/3 cups sugar

- 1 cup finely chopped pecans

- 2 1/2 tsp pumpkin pie spice

- 3 1/3 cups all purpose flour

- 2 tsp baking soda

- 1 1/2 tsp salt

- 15 oz can pumpkin

- 4 vegan eggs (1/4 cup unsweetened apple sauce + 1/2 tsp = 1 vegan egg)

- 1 cup vegetable oil

- 1/3 cup water

- 1/4 cup bourbon

For Icing:

- 1 cup powdered sugar

- 2-3 tsp coconut milk

Directions

For Bread:

- Preheat oven to 350 degrees celcius. Grease bottom and sides of two 9x5" loaf pans.

- In a small bowl combine 2/3 cup sugar, pecans, and 1 1/2 tsp pumpkin pie spice.

- In a large bowl stir together flour, baking soda, salt, and 1 tsp pumpkin pie spice.

- In another large bowl combine 3 cups sugar, pumpkin, vegan egg, oil, water, and bourbon. Add to flour mixture. Stir until combined.

- Spread half of the batter into loaf pans. Sprinkle with half of the pecan mixture. Spread the rest of the batter and sprinkle the rest of pecan mixture on top.

- Bake 65-70 Minutes or until a toothpick comes out clean. Cool for at least 30-45 minutes before eating.

-Drizzle with icing (recipe below).

For Icing:

- In a small bowl stir together 1 cup powdered sugar and coconut milk until you reach drizzling consistency.
