Vegan Mixed Berry Cobbler
( serves: 8 Servings )

Cook Time: 20 Minutes


For Shortbread:

- 2 cups all purpose flour

- 5 tbsp granulated sugar

- tbsp baking powder

- 1/2 cup cold Earth Balance butter

- 1 flax egg (Mix one tbsp flaxseed w/ 3 tbsp water)

- 1/2 cup unsweetened vanilla almond milk

- 1/2 tsp vanilla extract

For Berries:

- 3 bags frozen mixed berries

- 1 tbsp all purpose flour

- 1/4 cup granulated sugar


For Shortbread:

- Preheat oven to 425°F.

- In a medium bowl add flour, sugar, baking powder, and salt. Stir to combine.

- Make a well in the center of the mixture and flax egg and milk. Stir until the mixture is combined.

For Berries:

- Mix berries, flour, and sugar in a separate bowl.

- Grease a 13x9" baking dish and pour in berry mixture.

- Spoon shortbread mixture over the top.

- Bake until shortbread is golden brown (about 20 minutes).
