Vegan Pumpkin Cream Cheese Swirl Bars with Chocolate Chips
( serves: 15 Bars )

For Bars:

- 2 cups all purpose flour

- 1 1/2 cups sugar

- 2 tsp baking powder

- 2 tsp cinnamon

- 1 tsp baking soda

- 1/2 tsp salt

- 1/4 tsp cloves

- 15 oz can pumpkin

- 3 vegan eggs (We used Follow Your Heart Vegan Egg)

- 1 cup vegetable oil

For Cream Cheese Swirl:

- 4 oz softened vegan cream cheese (We used Trader Joe's Vegan Cream Cheese)

- 1/4 cup sugar

- 1 vegan egg

- 1 tbsp vegan milk of your choice

- Dairy free chocolate chips (can be found at Trader Joe's and most grocery stores)


- Preheat oven to 350 degrees fahrenheit. In a large bowl, mix together all the dry ingredients from the "Bars" ingredient list.

- Stir in pumpkin, vegan egg, and oil until combined.

- Spread batter in a 15x10" baking pan coated with nonstick cooking spray.

- In a medium bowl beat softened cream cheese and a 1/4 cup sugar with a mixer on medium until combined. Beat in vegan egg and milk.

- Drizzle cream cheese mixture over pumpkin batter. Using a butter knife, swirl to create a marble texture.

- Sprinkle with chocolate chips.

- Bake for 45 min-1 hour or until a tooth pick comes out clean. Cool before eating.
